Jean-Luc Pasquet's farm, which has been certified organic for over 20 years, is home to a rare vine: the fragile Folle Blanche . Once the queen of cognac grape varieties, it was almost completely destroyed by phylloxera in the 19th century . Today, the variety accounts for less than 1% of all the land used for cognac production .
With L'Organic Cognac Folle Blanche, the Pasquet house is bottling a real rarity in small batches. It is the only cognac that consists of 100 percent purely organically grown Folle Blanche grapes . In harmony with nature, on naturally fertilized soil full of microorganisms, Jean and Amy Pasquet have succeeded in cultivating the capricious grape variety. They harvest, distill and mature the grapes separately for at least ten years - first for a year in new barrels, then in older French oak barrels.
The result? A perfect combination of sweetness and spice. Mirabelle plums and peaches play the main role in the nose in combination with fresh notes of menthol and orange peel , while the fruity notes on the palate merge with soft honey notes and spices such as nutmeg.
